Rice with hot smoked salmon and fresh green peas

Today I'm having  rice with fresh green pea, hot smoked salmon and cherry tomatoes. Doesn't fit? It does, try it! 

Ingredients per 2 large portions: 
  • 200g hot smoked salmon
  • 2 young onions
  • handful chopped chives
  • 8-10 cherry tomatoes
  • 150g fresh green peas
  • 2 tablespoon ghee or butter 
  •  pinch salt ( I used sea salt with Italian herbs)
  • pinch black pepper
  • 1 bag rice

Boil rice according to instructions on the box (boil for ca 20 minutes). Drain it. In other pot boil the green peas in small amount of water for 15 minutes. Drain it and flush with cold water. It will keep your peas green and crispy. Drain it. Cut half of peas into halves and save several of them for garnish. 


Melt the butter/ghee on the frying pan. Cut onions into halves and brown them on fat for 10 minutes. Take them away from the pan, cool down and chop finely. Chop salmon, tomatoes and chieves. 


Place the rice on the frying pan (use the same butter which was used for onions). Add salmon, peas, tomatos, chives and onion to the rice. Mix all and heat up for several minutes. Spice with salt and pepper. Serve hot.
