Ricotta hotcakes

Very simple recipe of Nigella Lawson from the book "Forever summer" for tiny, fluffy hot cakes.  


Ingredients per 2-3 servings:

  • 250g ricotta cheese
  • 125ml milk
  • 2 big eggs
  • 100g wheat flour
  • 1 teaspoon baking soda
  • pinch of salt
  • oil for frying (ok 2-4 table spoons)
  • fruity marmalade (optionally)
  • 1 tea spoon of cinammon
  • couple fresh sage leaves  
Separate whites and yolks. Wisk the egg whites stiffly with a pinch of salt. In a next bowl mix milk with egg yolks and ricotta cheese, add flour and baking soda. Add whites' foam carefully. Stir gently with spoon to make homogenous mixture. 


Pour oil on the frying pan and warm it up. Put small pieces of fresh dough using a table spoon. Brown the small pancakes until goldish color of their surface. Serve with golden syrup, marmalade or fresh fruits or spices. I used my granny's marmolade, cinamon and sage leaves.
