Homemade rafaello pralines

After making a milk sandwich dessert, recipe here, I knew that this milky filling would be perfect for making Rafaello. These small candy balls are milky-coconut flavour, extremely sweet and the best when served cooled. It's very simple recipe which I can strongly recommend.  
Ingredient for 40 candies:
  • half a glass milk
  • 2/3 glass sugar
  • 350g of butter
  • Vanilla flavor 
  • 3 glasses powdered milk 
  • 200g mascarpone cheese
  • 50ml coconut liqueur ( e.g. malibu) 
  • a handful of almonds or hazelnuts 
  • 200g of coconut shreds
Note: glass volume is ca 250ml/8 fl.oz.

Melt sugar in liquid milk, mix to dissolve sugar entirely. Let it cool down.  Add  soft butter, mix and partially add powdered milk, add mascarpone cheese and alcohol. Mix all together.  Let the blend to cool and thicken in the fridge for 1 hour. Make small pralines, and place 1 almond/nut into each candy (no need to peel the nuts off). Cover the pralines with coconut shreds. Keep them in the fridge, serve cooled.
