Korea: Japchae- chap chae

I wanted to prepare some Aisan food, something stir fried... It turned out that I have no needed ingredients beside soy sauce and seasame oil and glass noodles. So I started to improvise. Totally unexpectedly it turned out that I cooked Korean food named chap chae (japchae).  One thing missing in the dish was spinach. For the future I have to prepare myself better  and go shopping. Chapchae is strongly recommended for sesame fans. The dish is delicious.
Beef marinade:
  • 3 tablespoons sesame oil
  • 1 chili pepper
  • 3 scices fresh ginger 
  • 2 tabelspoons of sweet-hot chili
  • 1 tablespoon soy sauce
  • peeled skin half of a lime
  • 1 tablespoon lime juice
  • salt, peeper
Mix all ingredients together, chilli and ginger must be chopped. Remember to take out the lime skin before taking meat on a frying pan. Meat, chopped in thin stripes should be marinated for at least 1 hour. The longer, the better.

Ingredients for the dish (3 persons):
  • 200g beef sirloin
  • 200g glass noodles
  • frozen Chinese mix vegetables (contains: onion, carrot, mun mushrooms, leek, bamboo stripes, bean-germs)
  • 4 tablespoons sesame seeds
  • 4 tablespoons soy sauce
  • half lime juice
  • 1 tablespoon sugar
  • 2 slices ginger (chopped finely)
  • 2 garlic cloves
  • half chili pepper
  • bunch of chieves
  • salt and pepper 
  • sesame oil, for frying
As stir fried dish, all ingredients will eventually cooked in one wok pan.

Boil the noodles in salted water (follow the instructions on the package, 2-3 minutes should be enough.  Roast sesame seeds on the dry wok/frying pan. Roast it to obtain golden color. Add one tablespoon of sesame oil, chopped garlic, chili pepper and chives, add the beef together with the marinade (take out lime skin only). Fry on maximum power for 10 minutes, stir it. Add vegetables (lower the heating power), sesame oil and soy sauce. Mix all together. Add sugar, ginger (chopped) and spices. Cook for ca. 20 minutes (let vegetables to soften). Add boiled noodles. Mix all together. Spike with lime juice before serving.
