Pasta with pistachio sauce

Pesto (famous Italian sauce can consist of many seeds or nuts; pistachio pesto is one of my favourite. If you have got a blender, preparing of this dish is an express one. The recipe comes from my friend and now is in my regular menu.  

Ingredients per 2 servings:
  • 250g fresh tagliatelle  (you can use different, regular pasta)
  • 2 handfuls of rocket salad
  • 100g pistachio, peeled (if pistachio nuts are salted don't use salt to your dish)
  • 10-15 leaves of fresh basil
  • 2-3 spoons of olive oil
  • salt and pepper
  • 50g of grated hard cheese for garnish (e.g. grana padano)
Place pistachio, rocket salad and basil in a blender. If you haven't got a blender, use knife and chop them finely. All together it should create homogenous paste. Add olive oil and black pepper. 
Boil pasta in salted water, according to directions on the package. With my fresh pasta it took 3 minutes Drain it, don't wash with cold water! Mix hot pasta together with pistachio paste, stir uniformly. Put some cheese on the top. 

If you use grated grana padano you can add it already to pistachio before mixing with pasta.
